Ingredients
  

Green Goddess Dressing
  • 1 ripe avocado
  • 1/4 cup vegan mayo
  • 1/4 cup fresh parsley
  • 2 tbsp fresh chives
  • 2 tbsp fresh basil or tarragon
  • 1 clove garlic
  • 1 tbsp lemon juice
  • 2 to 3 tbsp water to thin
  • Salt and pepper to taste
Chickpea Salad
  • 2 15 oz cans chickpeas, drained and rinsed
  • 1/2 cup shredded cabbage
  • 1/2 cup diced cucumber
  • 1/4 cup diced red onion
  • Salt and pepper to taste
Assembly
  • 8 slices bread toasted
  • Handful of fresh spinach leaves

Method
 

  1. Blend avocado, vegan mayo, herbs, garlic, and lemon juice until smooth, thinning with water as needed.
  2. Mash chickpeas until mostly broken down, leaving some texture.
  3. Fold in cabbage, cucumber, red onion, and the dressing.
  4. Let rest in the fridge at least 15 minutes if time allows.
  5. Assemble on toasted bread with spinach leaves.
  6. Slice and serve, or wrap for later.

Notes

  • Use fresh herbs, not dried, for the best color and flavor in the dressing.
  • Toast the bread to prevent a soggy sandwich.
  • The chickpea salad keeps well in the fridge for up to 4 days, making this a great meal-prep option.
