Sauté chopped garlic and diced onion in olive oil until fragrant and translucent, about 4 to 5 minutes.
Add chickpeas, broth, thyme, and bay leaf. Bring to a boil, then reduce to a simmer.
Simmer uncovered 15 to 20 minutes until the garlic is completely soft. Discard the bay leaf.
Blend about half the soup until smooth, leaving the rest with whole chickpeas.
Stir in lemon juice, then season with salt and pepper to taste.
Serve topped with olive oil, parsley, and red pepper flakes, with crusty bread on the side.
