Ingredients
  

  • 2 large yellow onions cut into petals
  • 1 ½ cups buttermilk
  • 1 tbsp hot sauce
  • 1 ½ cups all-purpose flour
  • ¼ cup cornstarch
  • 1 tbsp paprika
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tsp cayenne
  • Salt to taste
  • Oil for frying
Dipping Sauce:
  • ½ cup mayo
  • 2 tbsp ketchup
  • 1 tsp horseradish
  • Pinch of paprika

Method
 

  1. Cut onions into petals.
  2. Soak in buttermilk and hot sauce for at least 20 minutes.
  3. Mix seasoned flour ingredients.
  4. Double dredge each petal: flour, buttermilk, flour again.
  5. Fry at 350°F in batches, 2-3 minutes per side, until golden.
  6. Drain on a wire rack.
  7. Whisk sauce ingredients together and serve alongside.

Notes

  • The double dredge is essential for the signature crispy texture.
  • Fry in small batches to maintain oil temperature.
  • Best served immediately; doesn't reheat or freeze well.
