Ingredients
  

  • 1 cup rolled oats
  • 2 cups milk or water
  • 1/2 cup shredded carrot
  • 1/2 cup diced apple
  • 1 teaspoon ground cinnamon
  • 1 tablespoon maple syrup or brown sugar
  • 1 pinch salt
  • 1/2 teaspoon vanilla extract
Optional Toppings
  • Chopped walnuts or pecans
  • Extra maple syrup
  • Yogurt
  • Raisins

Method
 

  1. Grate the carrot and dice the apple into small, even pieces.
  2. Combine the oats, milk or water, carrot, apple, cinnamon, sweetener, and salt in a saucepan.
  3. Bring to a gentle simmer over medium heat, stirring occasionally.
  4. Cook for 6 to 8 minutes, until the oats and carrot are tender and the mixture has thickened.
  5. Remove from heat, stir in the vanilla extract, and adjust sweetness to taste.
  6. Serve topped with nuts, extra maple syrup, or yogurt if desired.

Notes

  • Grate the carrot finely so it fully softens in the short cook time.
  • Stir regularly to prevent sticking or scorching on the bottom of the pot.
  • Taste before adding extra sweetener, since apple and carrot both bring natural sweetness.
  • Add crunchy toppings like nuts at the end, not during cooking, to keep their texture.
  • Reheat leftovers with a splash of extra milk, since the oatmeal thickens considerably once chilled.
